Every few weeks, I get a message that goes something like this: "Hey! Do you do pop-ups? I'd love for you to come set up somewhere and just sell drinks to whoever walks by."
Or: "Can I hire you for my event, but just pay per drink instead of a flat rate?"
I appreciate every single one of those messages. I do. But the answer is no — and I want to explain why, because it's not arbitrary. It's the whole reason Tee Coffee Studio works the way it works.
A pop-up coffee setup works when the goal is volume — foot traffic, transaction count, turnover. The barista makes a drink, takes cash or a tap, moves on to the next person. It's efficient. It's fine. But it's a completely different service than what I provide.
When I show up to your event, I'm not there to run a register. I'm there as an extension of you as the host. I know your guest list is coming. I know what's on the menu. I know your vibe, your timing, and what you want your people to feel when they walk through the door. That level of intentionality doesn't happen when I'm set up on a street corner hoping strangers stop by.
Pop-ups are transactional. What I do is relational. Those two things don't live in the same business model.
Here's the honest version of what happens with per-drink pricing: the person paying suddenly becomes very aware of how many drinks are being made. They start thinking about it. They start watching. And now the energy at their event has shifted from "my guests are taken care of" to "I hope no one gets a refill."
That's not the event you planned. And it's not the experience I want to deliver.
Flat-rate pricing exists specifically so that never happens. You pay one number, your guests drink as much as they want, and nobody is doing math in the middle of your party. The experience is unlimited and unhurried — the way it should be.
